foccaccia - basic

Ingredients
Directions
2 cups water1 tbsp honey1/4 cup olive oil (optional)4 cups enriched bread flour (whole wheat or white)1 tbsp (3 tsp) kosher salt
Mix 1 tbsp honey with 2 cups warm water and 1/4 cup olive oil until dissolved in a large bowl.
Add 1 tbsp active dry yeast (rapid rise works best).
Let proof for 5 to 10 minutes (liquid will smell yeasty, have large bubbles in the surgace).
Mix in 4 cups of flour with a wooden spoon until well mixed (you do not need to knead, hyuck hyuck).
Add in 1 tbsp kosher salt. If using table salt or sea salt, decrease amount.
Add other spices/additives as desired (cheese, grated potatoes, olives, garlic, rosemary to name a few).
Let sit for 1 hour covered with damp towel.
Use a greased or non-stick baking pan 9 x 11 or similar. You can also line with parchment paper if you are avoiding fats.
Scoop dough (which should have large bubbles and be stretchy, still sticky) into baking pan, spread flat with floured hands and let rise for another hour.
Bake at 425 for 30 to 45 minutes: until done or until you can't stand to wait!
Let cool in pan for 20 to 30 minutes (the hardest part).
Slice into at least 15 pieces, which are pretty tall and can be cut in half lengthwise as well.
Serve with marinara, olive oil, balsamic vinegar and/or butter.
Also makes great toast, sandwiches, garlic bread, pizza, etc.
Note: the stickier your bread dough, the bigger the bread "bubbles" will be. More liquid allows the yeast to move around more freely, thus consuming more of the sugars and leaving more protein. The gluten (protein) in the wheat is what makes bread leavened and provides structure for the bubbles. You don't need to knead! Kneaded bread is delicious too, but this is simple and easy.
This recipe does not support itself well for regular bread loaves or boules. Good for pre-baked pizza dough, foccacia and any other flattish breads. Makes great dumplings too!
