5 Nasoya egg roll wrapers, cut in half.5 cup of chick peas2 oz Feta cheese3 oz healthy choice turkey slices, torn into small piecesPam or similar sprayA glass with a little water in itBasically the chick peas and the Egg roll wrappers are the most important part. You can change the other ingredients to fit what you personally like. Less sodium then no feta. Vegetarian then no turkey. Simple as that! Please let me know if you come up with any other additions that you think are great so I can also try them.
Makes 10 wontons
1. Preheat toaster oven to 400 (for slightly crispy wontons)
2. If you haven't yet slice the egg roll wrappers into two even pieces. You can buy them already cut into wonton sizes but this is more cost efficient and it isn't hard to do.
3. Put all chick peas into a microwave safe bowl and heat for around 20 seconds. Basically until you can smash them into a paste.
4. Add all the feta and mash again. If it doesn't mix well heat for another 10 seconds.
5. Take the torn up turkey slices and mix through with a tablespoon so it's evenly spread.
6. Lay out the egg roll wrappers and place about 1 tablespoon in the top half of the rectangular wrapper.
7. Wet the edges around where you placed the filling and fold the wrapper up to form a square. Push down firmly on each side pushing out any air that was trapped in. If you want fold the top down so it makes a point.
8. Use Pam on a toaster oven cooking sheet then place as many wontons as will fit. If they're touching that's fine. Spray a little extra Pam on the top of each wonton.
9. Put in for 4 minutes then turn over and cook for another 4 minutes. Take out and I wipe the extra Pam/olive oil off. Repeat for any more wontons that are left over.
10. Serve and eat. Add a sauce if you so choose but I like them just as they are.
