Kim's Frittata

Ingredients
Directions
* 1 tsp olive oil * hash brown potatoes (low cal frozen), 2 cups * Egg, fresh, 2 large * Egg white, 6 eggs * Mushrooms, fresh, 1 cup, pieces or slices * Green Peppers (bell peppers), 1 cup, chopped fine * Peppers, sweet, red, raw, .5 cup chopped fine * Onions, raw, 1 medium (2-1/2" dia) chopped fine * Ham, extra lean, (5% fat), 3 slices (6-1/4" x 4" x 1/16") chopped fine * light old cheddar cheese, 0.5 cup shredded * salt, pepper and garlic powder, to taste
finely chop all the veggies and ham
heat oil in teflon pan
fry hash browns till done
press hash browns into a 9x9 baking dish forming the crust
saute all the veggies and ham until tender (if too watery,
drain and add 1 TBSP flour)
whisk the eggs and egg whites with salt, pepper and garlic
powder (to taste)
put veggie ham mixture on top of the hash browns and pour
egg mixture over top
bake in a 350* oven for 20 minutes
remove and sprinkle shredded cheese on top and bake 10
more minutes
serves 6
