Creamed Corn

Ingredients
5 ears of corn2 T butter.5 c nonfat milk2 oz neufchatel cheese
Directions
Cut the corn off the ears and saute in a pan with the butter over medium high heat for about five minutes until the kernals are bright yellow and a little soft. Puree half of the corn with the milk. Return the pureed corn to the pan, turn the heat down to low and add the neufchatel cheese. Mix until the cheese melts. Serves four or five.
