Elaine's Waldorf Salad (w/ Citrus Flair)

1.5 c celery, chopped2 c red grapes, halved4 c apples, unpeeled and chopped1/3 c dried cranberries1/3 c dried dates, chopped1/3 c golden raisins3/4 c walnuts, chopped1/2 c greek yogurt, plain3 tsp orange zestJuice of 1 lemonJuice of 1/2 orange2 Tbsp honey12 c spinach
Makes 12 3/4-cup servings
Chop celery and grapes and put in mixing bowl.
Chop apples and add juice of one lemon to preserve color.
Add apples, cranberries, raisins, dates, and walnuts to bowl.
Mix yogurt, honey, orange juice, and orange zest in small bowl.
Add dressing to fruit mixture and toss lightly.
Chill.
Serve 3/4 c fruit mixture over 1 c spinach or greens.
