Easy Blueberry Muffins

1 1/2 cups all-purpose flour1/2 cup granulated sugar1/2 tsp salt2 tsp baking powder1/3 cup canola oil1 egg1/3 cup 1% milk1 cup blueberries (fresh or unsweeted frozen)
Mix the flour, sugar, salt and baking powder in a large mixing bowl. Put the Canola Oil in a 1 cup measuring cup; add the egg and enough milk to make 1 cup; add to flour mixture. Mix until ingredients are just incorporated; add blueberries and mix. Spray a 12-cup muffin tin with cooking spray and fill the cups nearly all the way full.* Bake at 400 degrees for 18-22 minutes (depending on your oven) or until a toothpick inserted in the center comes out clean.
*I sometimes sprinkles just a little bit of granulated sugar on the muffins to give it a little crunch - this is only optional and not included in the nutrition facts
