10 Cups low-sodium vegetable broth1 cup chopped carrots1/2 cup chopped turnips or swede2 leeks, rinsed well and chopped1 cup chopped onion1 cup dried lentils1 cup dried barley30g tomato paste1 tsp olive oil
Heat the olive oil in a heavy casserole pan and add the carrots, leeks, onion, and turnip and fry until the onions are soft. Add the broth, lentils and barley and simmer, stirring occasionally, for one hour. Add the tomato paste and salt and pepper to taste. Serves 6.
