Basic Muffins(Almond Flour, SCD)

Ingredients
2 cups Almond flour1/4-1/2 cups honey 3 eggs 1/2 cup butter, melted1/2 tsp salt1 tsp baking soda
Directions
makes 12
Mix all ingredients with a hand mixer or in a food processor, starting with wet ingredients.
Pour evenly into greased muffin tins.
Bake 325 F for 15-20 minutes.

    I substituted olive oil for butter because I did not have enough butter at home. I grated a quarter of zuccini, a medium carrot and I added 2/3 cup of soaked raisins and about a table spoon full of choped pecans. - 6/13/21
