Chedder Beer Soup

4 tbsp butter, unsalted1/3 cup green onion, chopped1/4 cup wheat flour2 cans (10oz ea) fat-free chicken broth1/2 cup light beer1 tbsp dijon mustard2 cups half and half2 cups sharp chedder cheese, shredded 1 pound low fat smoked sausage, bite size chunks
Melt butter in large saucepan. Add onion and cook over medium-high heat until translucent. Stir in flour; cook 1 minute. Add broth, beer and mustard. Cover and simmer 30 minutes. Add hot half and half, cheese and sausage. Warm until heated through and cheese melts. Serves 8.
