Carmelized Tofu with Brussel Sprouts

Ingredients
7 oz House Tofu - firm, 2 tbl packed Brown Sugar, spray pam 1/4 cup pecans, 12 Brussels sprouts, 1/3 c fresh Cilantro 3 clove Garlic, Dash Salt
Directions
1. Slice tofu longways in 1/4 inch slices- then half so that they are skinny pieces
2. Heat oil and dash of salt in frying pan
3. Lightly brown tofu (about 5-6 minutes)
4. Add Pecans and Garlic (cook 3 more minutes)
5. Add Brown sugar (cook 2 more minutes)
6. Put tofu mixture aside in bowl and add cilantro- mix
7. In same used pan cook sliced brussel sprouts until slightly softened on med/high heat- approx 5 minutes
8. Put brussel sprouts on plate and add tofu mixture to top.
Makes 2-4 servings

    I noticed that you changed the recipe a bit (pam instead of 1 tbs oil, 2 tbs brown sugar instead of 3 tbs, 1/4 c pecans instead of 1/3 c pecans) so this version reduces the fat and total calories vs the original. I don't know how it tastes, but thought it worth pointing out here. - 1/5/10
