Costa Rican Arroz con Pollo

3 c uncooked white rice1 rotisserie chicken, deboned/deskinned/shredded2 carrots, diced1/2 onion, diced1 sm red bell pepper, diced1 T cilantro1 T parsley1 c frozen cornsalt/pepper to taste3 T butter2 T olive oil3-4 T Salsa Lizano
Make the rice the day before. Debone/skin/shred the rotisserie chicken. Heat oil/butter in large skillet. Saute onion, carrot, pepper, parsley, cilantro, Salsa lizano. Add salt/pepper. Add chicken and corn. When thoroughly mixed, slowly add rice a little at a time. Continue till all rice is incorporated. Heat till vegetables are tender and rice/chicken is heated through.
