1 tbsp Olive Oil1 Onion, medium, chopped5 oz dried Oyster Mushrooms, rinsed6 cups Vegetable Broth1/2 tsp Thyme, dried1/2 tsp Salt3tbsp Nutritional yeastdash Pepper1. Heat Oil in a saucepan over med-high heat, add onions & saute until tender and golden broth, 5 min.2. Add mushrooms, potatoes, broth & thyme and bring to a simmer. cover, reduce heat to low and simmer until potatoes are tender, about 10 min.3. Puree soup in blender ( batches) until silky smooth. Return to pot and heat to a simmer. Season with salt & pepper.Serves 6
