THAI CHICKEN PIZZA

Ingredients
1 Boboli pizza shellolive oil2 T hoisin sauce 6 T good peanut sauce (bottled or made from mix with light coconut milk)3/4 c grated carrots4 scallions cut into thin matchsticks 3/4 c bean sprouts1 chicken breast cooked and diced into 1/2 inch pieces (or 1 cup sauteed marinated tofu)1 c shredded Mozzarella cheese
Directions
Pre heat oven to 400 degrees
Brush pizza shell lightly with olive oil
Spread hoisin sauce on shel
Spread 4 T good peanut sauce; reserving 2 T for top of Pizza
Distribute evenly over the shell:
grated carrots
scallions
bean sprouts
Chicken (or sauteed tofu)
Spread Mozzarella cheese over the veggies
Bake in a hot oven until cheese is bubbly and starting to brown
Allow to cool slightly
cut into 8 squares or slices
