Chocolate Banana Muffins

Ingredients
DRY:1 cup (120g) Wholegrain Spelt flour (Dove's Farm)2 tbsp cocoa powder, seived1/2 cup unrefined granulated sugar1/2 tsp baking powder1/4 tsp baking soda1/4 tsp salt1/8 tsp allspiceWET:1 banana, mashed1/2 cup (125ml) Unsweetened Light Soya Milk (Alpro)1 tbsp rapeseed (canola) oil1 tbsp smooth peanut butter1/2 tsp pure vanilla extract
Directions
Preheat oven to 180C/350F.

Mix dry ingredients in a large bowl.

Whisk together wet ingredients, pour into dry and mix until just combined, don't overmix.

Line a muffin tin with 6 papers and fill each evenly (about 1/2 - 3/4 full).

Bake for 30 minutes, or until a skewer comes out just clean.

Leave to cool for a good 5 minutes in the tin then remove to a cooling rack.
