Chicken Teriyaki

Baby or Regular carrots, choppped - 3 cupsCelery, chopped - 3 cupsBoneless, skinless chicken breast - 20oz1 can waterchestnuts, approx 1 cup drained1 head of broccoli - choppedTeriyaki sauce - 1.5 cupsOlive oil - 2 tbs for cooking chickenCrushed Pineapple from can - 1 cupDry roasted cashews - 1 cup
Prep: Chop celery, carrots and broccoli into small pieces.
Cut approx. 20 oz. of chicken breast into 1" cubes. Saute in large pan with 2 tbs olive oil until cooked. Add celery, carrots, broccoli and teriyaki sauce. Let simmer approx. 10 minutes, stirring occasionally. Add pineapple with juice, water chestnuts (drained), and cashews. Stir and let simmer for another 10 minutes. Makes approx. 10 8oz servings. Serve over brown or white rice.
