Vegan Zucchini Bread

Ingredients
1 cup unsweetened applesauce1 cup white sugar1 cup packed brown sugar3/4 cup vegetable oil2 teaspoons vanilla extract2 1/2 cups shredded zucchini3 cups all- purpose flour3 tablespoons flax seeds (optional)1 teaspoon salt1 teaspoon baking soda2 teaspoons ground cinnamon1/2 teaspoon baking powder1/2 cup chopped pecans (optional)
Directions
Preheat oven to 325 degrees F (165 C). Grease and flour two 9x5 loaf pans.
Combine applesauce, sugars, oil, and vanilla and mix until smooth. Add zucchini.
Combine dry ingredients together and add them to the wet mixture. Add nuts if desired.
Divide batter between the greased loaf pans.
Bake 55-60 minutes, until toothpick inserted in center comes out clean. Cool pans 10 minutes before removing loaves. Allow bread to finish cooling on wire rack.
Cut into slices and enjoy!
