12 miniature bagels (whole wheat) 12 pieces turkey bacon (fried crisp and cut in half) 12 eggs 1 cup grated 2% cheddar cheese
Recipe makes 12 servings
Slice each bagel in half.
Pre-cook the bacon, chop it up and add it to the eggs.
Pour into greased muffin tins to make 12 egg "patties". Add 1 TBSP. cheese to each patty. Bake at 400F for 12 minute;
On the bottom half of the bagel place cooked egg. Complete sandwich with top of bagel.
Allow to cool slightly, then wrap in plastic wrap individually and place in a large labled ziploc bag and freeze.
To serve, remove 1 bagel sanwich from bag, and remove wrapping.
Place upside down in microwave and heat for 30 seconds.
Place right side up and zap for 30 seconds more or until heated through. **time may vary in your own microwave**.
Eat warm.
