Eggplant Rollatini

Ingredients
1 eggplant sliced thinly2 scrambled eggs3/4 cup flourBunch Basilolive oilmarinara sauce 1.5 cups1 cup ricotta, part skim2 cups fat free mozzarella
Directions
Oven to 375 degree
Heat olive oil or canola oil in pan
Thinly slice eggplant and salt lightly
Dip in flour than egg mixture, quickly brown in pot
Line center of eggplant with basil
Mix ricotta & mozzarella with 1/4 egg mixture
Spoon over mixture on eggplant over basil
Roll and place roll down on lightly sprayed pan
Top with tablespoon marinara sauce and shredded cheese
Cook 20 minutes
