Slow cooker creamy cauliflower soup

1/2 package frozen cauliflower1 large baking potato, peeled and cut into chunks1 cup chopped onion2 cloves peeled garlicfew red pepper flakes2 cups chicken broth1 T. butter or margarine1/2 cup fat free half and halfsalt and pepper to taste1/4 cup chopped scallions (opt.)Sprinkling of shredded reduced fat cheese
Place frozen cauliflower, potato, onion, garlic, a few red pepper flakes and chicken broth in slow cooker. Cover and cook on low for 8 hours. Transfer in portions to a blender, or use an immersion blender, to blend until smooth. Add butter and cream. Add seasoning to taste.
Serve with a sprinkling of grated low-fat cheese and scallions. Makes 4 servings.
