Organic Chocolate Chip Oatmeal Cookies

flourbaking sodasaltcanola oilvanilla or chocolate soy milkunrefined sugar2 egg replacer eggs (half a banana)vanilla extractoatmealchocolate chips
heat oven to 350. mix flour, baking soda and salt together. set aside. mix together oil and sugar. mix until creamy. mix your egg replacer well. add the egg replacer mixture to the sugar/oil mixture. add about a third of the egg replacer mixture at a time, stirring in a bit before adding the rest. add the soy milk. add the vanilla. stir this mixture until it is a uniform color (this won't take long) slowly stir in the flour mixture. mix this well. stir in oatmeal and chocolate chips.
place large tablespoons full of the batter onto an ungreased cookie sheet. bake the cookies for about 9-13 minutes. sometimes they do not turn brown, so be careful not to burn them. remove from the oven once done and let sit for a few minutes before touching them as they are very delicate.
i got about 62 nice size cookies out of this (im guessing.. considering we ate much of the raw cookie in the process) but it is truly AMAZING! and very low cal!
