Beef and Rice Soup

Ingredients
16oz beef bottom round, minced4 cups cooked brown rice1.5 cups frozen peas and carrots mix1 tbsp minced garlic0.5 cup diced onion1 tsp dried parsley2-3 cups warm water2 tbsp beef bullion
Directions
In a crock pot, dissolve bullion in water. Place beef, garlic, and onions. Cook on high for about 1.5 - 2 hours, or until beef is done. Add vegetables, rice and additional water and turn down to low temp for an additional 1 - 1.5 hours. Just before serving, stir in parsley.
