Ingredients
3 large banana (or gypsy) peppers.25 cup plain nonfat yogurt2 wedges Laughing Cow Light Creamy Swiss Original Cheesedash of salt.25 cup panko bread crumbs2 tbsp Salsa Verde
Directions
Preheat oven to 400˚
Mix cheese, yogurt, and salt well in a small bowl. Split and remove seeds from all three chilies. Fill chilies with cheese mixture and dredge in a tiny bit of yogurt thinned with water. Roll in panko crumbs. Bake on a wire rack over a cookie sheet at 400˚ for about 15 minutes.
Serve topped with green salsa.
One serving is three large chilies.

    This recipe was FANTASTIC!!!!! I used the chipotle laughing cow and added a tablespoon of minced onion to the mixture DELICIOUS!!! - 2/2/11

    YUMMY!!! I made quite a few modifications to fit the ingredients I had on hand: used roasted hatch chilies instead of banana peppers, aprox .25 cup shredded white cheddar cheese instead of the Laughing Cow wedges, and ground Original Fiber One cereal instead of panko bread crumbs.
