JW Black Bean & Tomato Quinoa

Ingredients
2 tsp grated lime zest2 tb lime juice3 tb vegetable oil1 cup cooked quinoa1 15 oz can black beans, drained and rinsed2 medium tomatoes, diced4 scallions, chopped1/4 cup chopped cilantro
Directions
Whisk together lime zest and juice, oil, and salt and pepper to taste in large bowl. Add quinoa and toss well. FOld in remaining ingredients.

Makes 4 side dish servings.
