Modified South Beach Meatloaf

Ground Pork, 1 unit, cooked (yield from 1 lb raw)Irish Oatmeal (McCann's), 1 cupGreen Peppers (bell peppers), 0.5 cup, pureed Tomato Paste, 1 can (6 oz)Egg, fresh, 1 largeChicken Broth, 1 cup (8 fl oz)salt
1. Mix a can of tomato paste (the kind with basil, oregeno, and garlic in it) with 1 cup of chicken broth in a sauce pot, then cook on medium for 15 minutes.
2. While the tomato paste cooks, preheat the oven to 350 degrees and mix a pound of roast pork with 1 egg, 1/2 cup of oatmeal, and 1/2 cup of pureed green pepper. Add 1/2 cup of tomato paste when it's ready. Sprinkle with salt.
3. Form the meat into a loaf in a medium bread pan.
4. Bake at 350 degrees for 45 minutes. Spread remaining paste mixture over the top of the loaf, then bake for 15 more minutes.
5. Place on a serving platter and cool for 10 minutes before slicing.
This reheats well as slices browned in a frying pan and makes a great wrap when reheated and crumbled.
