Lasagna (whole wheat noodles)

Ingredients
1 # ground Italian sausage (or substite lean hamburger)4 cups of spaghetti sauce12 oz pkg of fresh, sliced mushrooms15 oz ricotta cheese2 cups shredded mozzarella cheese1/2 cup grated Parmesan cheese2 eggs1/4 cup fresh parsley1 pkg frozen spinach, Thawed1/4 tsp ground black pepper9 pieces whole wheat pasta, uncooked.
Directions
Heat oven to 350 degrees F.
Brown sausage (or hamburgery) with mushrooms. Add spaghetti sauce. Simmer for at least 20 minutes if not longer.
Mix ricotta, 1 cup mozzarella, parmesan, eggs, thawed spinach, parsley, and pepper in a large bowl.
Pour 1 cup of sauce on the bottom of a 13 x 9 pan.
Arrange 3 uncooked noodles on top of the sauce.
cover with 1 cup of sauce, then add the 1/2 cheese mixture then add more sauce.
Then repeat with another layer of noodles, 1/2 cheese mixture, and sauce.
Top with a layer of lasagna noodles and remaining sauce. Then the rest of the mozzarella cheese.
Cover with foil.
Bake 45 minutes. Remove foil and back an additional 15 minutes.
Let stand 10 minutes before slicing.
