Lowfat Mashed Cauliflower

1 large head of cauliflower, chopped finely4 - 6 oz Plain Greek Yogurt1/2 cup lowfat cream cheese1-1/2 Tbsp margarine1/2 C. finely shredded part-skim mozzerella cheese
Preheat oven to 400. Lighly spray deep casserole dish or use non-stick casserole.
Place finely-chopped cauliflower into lidded saucepan with about 1/2 cup water. Cover and boil until just tender. Drain.
In food processor or blender, combine all remaining ingredients EXCEPT mozzerella cheese, and mix lightly. Add cauliflower and puree until "mashed potato" consistency. Pour into casserole dish.
Top with shredded mozzerella and bake until cheese is melted and golden, about 20 mins.
