Italian "Not-so-Grilled Cheese"

Ingredients
1 slice sprouted rye seed bread (Alvarado St. Bakery)1 mozzarella string cheese1/2 tbsp. pesto sauce4 small slices tomato
Directions
Heat oven to 375 degrees. Spread the pesto sauce on the bread. Place the tomatoes on top of the pesto. Pull apart the string cheese and spread evenly over the tomatoes. Bake in the oven for about 10 minutes (you want the cheese bubbly and the tomatoes heated through, so keep an eye on it.). Makes 1 serving.

By the way, if you want a more traditional "grilled cheese" you can cut the bread in half, assemble and cook in a dry skillet. I press the sandwich flat with the bottom of another pan and cook it panini style.

    its good and really easy! i made it in sandwich form to make it easier to eat. on the other half I put pesto, basil seasoning, and spinach. then I assembled after baking both halves. in the future I might toast the bread first because it got pretty soggy. - 3/16/11
