Ingredients
4oz dry Couscous400ml Boiling WaterJuice of 1 Lemon 1 Vegetable Stock Cube1 cup diced Raw Carrots2 Tablespoons Olive Oil1 can drained Chickpeas1 tsp Creole Seasoning2 tsps Mustard Powder2 tblspns Fresh Basil2 tblspns Fresh Mint
Directions
Add the stock cube to the boiling water and add to the dry couscous. The stock will be absorbed.

When couscous is cold, fluff up with a fork and add the remaining ingredients. Mix well.

Leave to marinate for an hour or two before serving.
