Spinach Mushrooms Lasagna Rolls

Ingredients
Great Value Cut Leaf Spinach, 1.5 cup Mushrooms, fresh, 1 cup, pieces or slices Onions, raw, 1 tbsp chopped Green Peppers (bell peppers), 1 tbsp Celery, raw, 1 tbsp Extra Virgin Olive Oil, 1 tbsp Egg, fresh, 1 large Barilla lasagne noodles (1 serving = 2 noodles), 2 serving
Directions
COOK lasagna according to package directions. Drain and lay flat to separate.

HEAT olive oil in a small skillet. Add onions, green pepper, ,celery, spinach and mushrooms; sauté to your liking

MIX egg and ricotta cheese in a large bowl.

SPREAD 2 tablespoons ricotta mixture onto each lasagne sheet. Spread the spinach mushroom mixture. Roll up lasagna sheet with filling. Place in baking dish.

SPOON remaining sauce over roll ups.

BAKE for 30-40 minutes. Sprinkle with grated cheese before serving
