Lentil Tomato Pasta Sauce

Ingredients

1/2 tsp olive oil1 c chopped onion1 tsp fresh minced garlic1 can of tomatoes (medium)1/3 c tomato paste2 c water (approximately)2 c cooked lentils1 tsp thyme1 tsp oregano1 tsp mixed herbs1 bay leafpinch of sea salt fresh ground pepper to taste
Pour olive oil into a medium-large pot over medium-high heat.
Add onion and garlic and cook, stirring often until the onions are tender and translucent.
Add tomatoes (breaking them up with your hand, if whole), tomato paste and water (I just fill up the empty tomato can with water and use that much)
Stir through and add herbs and lentils.
Simmer on medium heat, stirring occasionally until the extra water has evaporated, and the sauce is thick (approximately 20 minutes)
Remove bay leaf and serve hot over whole wheat pasta.
Makes four 1 cup servings.
