Crunchy Breakfast Bake

Ingredients
2 c. chopped cooked ham1 med. green bell pepper (optional)2 tbsp. dried chopped onion1 can (4oz.) mushroom pieces & stems, drained1 c. heart smart bisquick5 c. wheat chex cereal1 cup low fat cheddar cheese2 c. milk4 med. eggs
Directions
Heat oven to 375 degrees F.
Lightly grease 13 x 9-inch (3qt.) glass baking dish or spray with non fat cooking spray. In a 10 inch non-stick skillet cook ham, bell pepper, onion and mushrooms for 3 minutes, stirring frequently.
Spread 3 cups of the cereal in baking dish. Sprinkle the ham mixture on top, top with cheese.
In medium bowl, stir bisquick mix, milk and eggs with fork until well blended. Pour evenly over top of cheese. Sprinkle with remaining cereal.
Bake uncovered 25 to 30 minutes or until knife inserted in center comes out clean.
