Lentil "Beef" Taco Filling

Ingredients
1 cup onion, chopped1 cup celery, chopped1 cup carrots, chopped2 cloves garlic, minced1/2 cup cilantro, coarse chop, firmly packed1 jalapeno pepper, chopped (or to heat preference)8 oz Low Sodium tomato sauce1 cup dried lentils, sorted, rinsed2 Low Sodium Veggie bullion cubes16 oz water1 TBS Chili powder1 TBS Onion powder
Directions
Makes 12 servings, approximately 3 oz or 85 g

After sorting and rinsing lentils, place everything into slow cooker.

Cook low 5-6 hours.

Stir occasionally.

Add water if necessary
