Chicken Francais - Gluten & Dairy Free

3/4 cup egg lightly scrambled (1 whole egg + 2-3 egg whites)1/4 cup chopped cilantro or parsley1/4 cup dry white wine2 tbls fresh lemon juice1/4 tsp salt1/8 tsp hot pepper sauce3 garlic cloves1 lb thin slice turkey or chicken breast1/4 cup all-purpose Gluten Free flour (non GF okay too)1 tbl olive oil, dividedCooking spray2 tbls margarine or other dairy free butter substitute1/4 cup dry white wine3 tbl fresh lemon juice
Combine the 1st 7 ingredients in a shallow dish.
Place flour in a 2nd shallow dish. Dredge turkey or chicken cutlets in flour, and dip in egg mixture.
Heat 1-1/2 tsp oil in a large non-stick skillet coated with cooking spray over medium heat. Add 3-5 pieces of turkey, cook 3-4 minutes on each side or until done. Remove turkey from pan, and keep warm. Repeat procedure with 1-1/2 tsp oil and remaining turkey.
Melt margarine in pan, add 1/4 cup wine and 3 tbls lemon juice. Bring to a boil, cook 10 seconds. Serve immediately over turkey. Yield 4 servings.
