Mexicali Round Steak

Ingredients
1-1/2 lbs. beef boneless round steak1 cup frozen whole kernel corn1 cup chopped fresh cilantro1/2 cup beef broth3 med. stalks celery, thinly sliced (1-1/2 cups)1 large onion, sliced1 jar (20-oz) salsa1 can (15-oz) black beans, rinsed and drained4 oz. monterey jack cheese, shredded
Directions
1. Trim excess fat from beef. Cut beef into 6 serving pieces. Place beef in bottom of crock pot. Mix remaining ingredients except cheese; pour over beef.
2. Cover and cook on low heat 8-9 hours or until beef is tender.
3. Sprinkle cheese over beef mixture.

Makes 6 servings

*For variation try pinto beans and cheddar cheese for the black beans and jack cheese
