Cucumber Curry

Ingredients
4 small cucumber or 3 large cucumbers, roughly chopped1 medium onion, chopped2 cloves garlic, minced1/2 cup skim milk1/2 cup vegetable broth2 tsp curry1 tsp cayenne pepper (modify to taste- 1 tsp is a lot)1 tbsp cornstarch dissolved in water
Directions
Saute the garlic and onion until tender. Add the cucumber, broth, milk, and seasonings. Simmer until cucumber is tender. Add cornstarch and water and stir until thickened. Serve alone or with rice. Makes two servings.
