Frittata (mushrooms, zucchini and onions)

* Egg, fresh, 2 medium (remove) * Zucchini, 100 grams (remove) * Mushrooms, fresh, 250 grams (remove) * Olive Oil, 1 tbsp (remove) * Onions, raw, 1 medium (2-1/2" dia) (remove)
This makes one big, or too small serving. Nutrition info is based on that one person eats it all up :)
Let saute' onions with a bit of salt on olive oil.
Add the cut zucchini, when it is half ready add mushrooms.
Add salt, pepper and origano if you like.
When this mix is ready add the lightly beaten eggs and make it in scrambled eggs or omlette style as you like. :)
