Spinach with Pine Nuts and Raisins

1 package fresh Spinach (or chard, or broccoli crowns)1 tablespoon Olive oil1-2 cloves garlic, crushed2 tbsp Pine NutsApprox 1/2 cup canned whole Tomatoes ripped into small chunks or 1/2 cup diced tomatoes with the juice1 handful raisins (approx 1/4 cup) RaisinsSalt and pepper to taste
Sautee garlic and pine nuts in olive oil over high heat until they start to brown.
Add tomato pieces and juice. Simmer over high heat for 1-2 minutes (the tomato should change color slightly).
Add spinach, raisins, salt and pepper.
Allow to cook for several minutes until the greens are cooked to your taste and the raisins have "plumped up"
Serves 2 as a main dish, or 4 as a side dish. Nutritional info calculated for 4 servings.
