Oma's Potato Soup

About 4 pounds of potatoes finely chopped or shredded2 cups finely chopped or shredded carrots2 cups chopped onionsabout 12 hot dogs cut into bite sized pieces - Hebrew National taste bestfresh or dried parsley - to tastesalt/pepper to taste
Peel and chop or shred about 4 pounds of potatoes - a five pound bag when peeled, eyes and bad spots are removed yield about 4 pounds shredded potatoes.
Add shredded potatoes to about 1 gallon of filtered tap water.
Bring to a boil; then lower heat to simmer.
Add 2 cups of shredded carrots and 2 cups of chopped onions.
Simmer, stirring occasionally to prevent sticking or burning for about 2 hours or until vegetables are very soft. About 10 minutes before serving add bite sized hot dogs and parsley.
Makes about 21 1 1/2 cup servings
