Spinach Saute

Ingredients
2 tsp unsalted butter85 g sundried tomatoes in oil, chopped85 g shredded carrots85 g chopped red onion1 clove garlic1 medium hot pepper, seeds removed100 g fresh baby spinach, washed
Directions
Saute tomatoes, carrots, onion, garlic and pepper in butter until onions are softened. Stir in spinach, cover and let simmer for 5 minutes.
