L.R. pumpkin oatmeal muffins with flax

Ingredients
80g (1 cup) quick oats110g (1 cup) oat bran2 cups hot 2% milk120g (1 cup) whole wheat flour45g (1/2 cup) ground flax seed188g (1 cup) sucanat or brown sugar2 tsp. baking powder1 tsp. baking soda1 tsp. salt2 tsp. cinnamon1 tsp. ginger1 tsp. nutmeg1/2 tsp. cloves2 eggs2 cups canned pumpkin160g (1 cup) raisins, plumped in hot water and drained
Directions
Preheat oven to 400. Soat the oats and oat bran in the hot milk for a few minutes while you combine all the dry ingredients in another bowl. Add eggs and pumpkin to the the oat mixture after it has thickened somewhat. Stir in dry ingredients just to combine. Stir in raisins. Divide among 24 greased muffin cups. Bake for about 20 minutes or until done. Makes 24 muffins.
