Good Morning Frittata

Ingredients

1 poblano pepper, diced1 cup fresh spinach1 whole egg2 egg whites5 kalamato olivescanola oilsalt & pepper
In a bowl, mix whole egg and egg whites with a fork. Add salt and pepper, set aside.
Coat an 8-inch skillet with 3/4 of vegetable oil. Add pepper and cook until just tender, ~5 minutes. Add spinach and saute ~2 minutes until leaves are wilted. Dice black olives and add to to skillet.
Pour egg mixture over vegetables. Cook on medium heat until eggs are set.
Remove from burner. Place a plate on top of the skillet and use a hot pad to hold the bottom of the skillet. Flip frittata falls onto plate. Add remaining oil to skillet and return frittat to brown on other side, ~1 minute.
Serve with whole-grain toast and fruit.
