Lentil soup with turkey bacon, carrots, and spinach

Ingredients
1 TBS canola oil1 med. onion, chopped1 clove garlic, minced4 slices turkey bacon, diced1 cup carrots, diced2 cups chicken broth6 cups water2 cups lentils1 bag fresh spinach
Directions
Saue onion and garlic in oil til soft. Add bacon and chopped carrots. Cook a couple of minutes. Add chicken broth and water. Hea til boiling. Add lentils, cover with lid slightly tilted. Cook on low 15 minutes. Add chopped fresh spinach. Cook 5 minutes til wilted. Add salt and pepper to taste. Makes about 10 cups soup.
