Spaghetti Squash Alfredo Bake

1 medium spaghetti squash2 tbs olive oil1/4 cup chopped onion1 medium red bell chopped3 cloves garlic minced2 cups chopped broccoli8 oz cooked chicken breast chopped2 wedges laughing cow light swiss cheese2 tbs light sour cream3 tbs grated parmesan cheese
Cut squash in half lengthwise clean seeds and boil for 20 minutes or until tender. While this is cooking saute chopped veggies in olive oil till tender. When squash is cooked drain and allow to cool so it can be handles. Using a fork, scrape pulp from rind. This will come out in spaghetti like strings. Add sqash and all other ingredients except parmesan cheese to large bowl mixing well. Pour into 8 X 8 casserole dish sprayed with a non stick spray. Top with parmesan cheese. Bake for 20 minutes in 350 degree oven. Serves 4
