Linguine & Clam Sauce

Ingredients
2 cans Chopped Clams (I used Snow's)4 tbsp Extra Virgin Olive Oil4 cloves Garlic, minced1/4 cup onion, diced2 tbsp Italian Seasoning1/2 tsp salt1 1/2 tsp butter8 oz. Linguine
Directions
Makes 4 servings
Prepare linguine per instructions
While linguine is cooking, prepare garlic and onion.
Open clams and drain reserving one can of juice in measuring cup.
In small saucepan, heat olive oil and butter. When hot, saute onions until soft. Add garlic and cook just enough to sweat garlic. Don't toast it.
Add reserved clam juice and bring to light boil. Add Italian Seasoning and salt to taste, reduce heat to simmer and wait for linguine.
After portioning out linguine, add clams to sauce and stir for a minute or two. Spoon sauce over linguine and serve.
Garnish with parsley and Parmesan cheese (course grated)
Sourdough French bread (garlic bread) is a good accompaniment.
