Pumpkin Pie or Bars - with coconut milk & no refined sugar!

2 -14 oz cans pumpkin1 - can coconut milk, full fat1/2 c real maple syrup (no pancake fake stuff!)1/2 c raw honey2 eggs2 c crushed graham crackers2/5 c real butterPumpkin pie spice to taste (4+ T)Real cream to whip for topping (optional)
Melt butter, mix with graham crumbs press into bottom of 2 pie pans, or a large rectangular baking dish, set aside. (I use a rectangular dish since its easier to cut smaller portions - I always make pie slices so big!)
Put honey & maple syrup into a pot on the stove, boil it down until a very small bit of it in a spoon put into water pulls together into a ball when you touch it. (similar to making candies, I'm sure there's a name for this process, I can't remember it!)
Mix filling ingredients well (leave whipping cream aside for topping), including honey/maple mix, add spices to taste.
Pour into baking dish(es).
Bake at 350 for 45 mins to an hr, or until a toothpick inserted about 1 1/2" from edge comes out clean. Middle will firm up after removal from oven.
Tastes pretty much like traditional pumpkin pie, but w/o unhealthy refined sugars & with a very healthy fat - coconut milk!
Your family will probably never know the difference.
Cut into 24 bars. Top with real whipped cream.
