Gluten Free Snickerdoodles

Ingredients
1/4 cup butter, softened1/4 cup shortening3/4 cup sugar1 egg1 3/4 cups Pamela's Ultimate Pancake and Baking Mix1 tsp cream of tartar1 tbl sugar (keep separate from rest of ingredients)1 tbl cinnamon (keep separate from rest of ingredients)
Directions
Cream together butter, shortening and sugar. Make sure it is blended well. Do not melt butter.
Add the egg and mix well
Add baking mix and cream of tartar and mix well.
Roll into balls the size of golf balls.
On a sheet of wax paper, mix together the tablespoon of sugar and tablespoon of cinnamon and roll the balls in it until completely coated.
Place on an UN-GREASED baking sheet about an inch and a half apart.
Bake at 350 degrees for about 8-10 minutes.
Allow to cool about five minutes, then remove from pan.
Eat and enjoy! Makes around two dozen cookies
