Pollo alla Cacciatore (Hunter style chicken)

Ingredients
6 chicken thighs skin removed1/2 cup flour2 tbls olive oil1 large onion chopped3 cloves garlic minced1 large green pepper sliced8 mushrooms sliced2 tbls tomato paste4oz white wine2 tomatoes peeled and chopped6oz chicken stock1 bay leafpinch of basilpepper to taste
Directions
Dredge the chicken thighs in flour. Heat oil in a large skillet and saute for 5 minutes until outside is golden brown (approx 5 min each side. Add onions, green peppers, mushrooms, and garlic, and cook a few minutes more. Add the next six ingredients, and simmer over low heat for 25min. When chicken is tender it should pull away from the bone easily. Season with Pepper and serve. Serve 3-4
