Ingredients
canned tomatoes1 can chickpeaseggplantzuchinnionion celerycarrotgarlichalf and halfromano cheesered pepperkalecooked pasta
Directions
soup makes approx. 8 1-cup servings. chop garlic, onion, celery, carrots and red pepper into small dice and saute with the olive oil over medium heat until onion is translucent. add tomatoes with there juice and 5 cups of water to pot. add garbanzo beans and half of the kale. cook for 20 minutes. add zuchinni, eggplant, grated romano remaing kale. cook 10 minuties more. add cooked pasta and half and half, season with salt and pepper to taste and bring up tp temperature. Take soup off the heat and let sit fot about 5 minutes before serving. Garnish with shredded basil if you like.
