Spicy Eggplant with Tomato

Ingredients
1 tsp ground cumin1 tsp cayenne1 tsp ground turmeric1 1/2 tsp salt3 tbsp olive oil1 eggplant peeled and cut into 1/2" cubes2 clove garlic chopped1 medium yellow onion chopped2 medium whole tomatoes chopped1 tsp granulated sugar
Directions
Cut eggplant into 1/2" cubes
Chop onion and garlic and saute in oil for five minutes.
Chop tomatoes
Add turmeric, cumin, and cayenne and continue cooking for two minutes.
De-glaze pan with a splash of water then add eggplant, sugar, salt, and tomatoes.
Continues to cook for ten minutes or until eggplant is tender. Stirring occasionally.
Serving is one cup.
