2 Tbsp. Extra Virgin Olive Oil4 cloves garlic1 large yellow onion2 yellow squash1/3 cup cooked brown rice1 tsp Salt1/2 tsp Pepper1 can (15 oz) Black Eyed Peas (drained)1/2 cup Vegetable Broth1 tsp chipotle tabasco sauce (optional)
Place one measure brown rice in a pot. Add 2 1/2 measures water. Bring to a boil. Cover and reduce heat to lowest setting and cook for 45 minutes.
Place the oil, diced onion, diced squash, garlic, salt and pepper in a dutch oven and saute (stiring frequently) until the onion is browned.
Stir in the cooked rice and one can of black eyed peas (drained). Lower the heat, cover and cook for 4 minutes. Add the hot sauce individually in bowls.
